Produced in small batches as the deserts seasons are unforgiving with common droughts and heat stress on these Mallee trees. This honey is a story of landscape survival, and its delicious flavour also delivers a Total Activity (TA) certification of 20+ (>MGO 800). Used daily, this honey is both a treat and a therapy.
Collected from Mallee trees in the red ochre soils of Western Australia's historic Goldfields district, this honey, in taste and colour embodies the harsh extremes of the desert environment its collected from!
TASTING NOTE: The aroma and flavour of this honey are so different, giving it a delightful complexity. A dry, dark aroma leaves you unprepared for the sparkling, bright, syrupy flavours of Jaffa, rosewater, golden syrup and canned pineapple juice. A honey filled with sunshine flavours.
